Green peanut soup

This quickly finished peanut soup can be eaten cold or hot. Use green vegetables that you like, there are no rules, play with flavors! Salt and pepper put as needed.


100 ml of crude peanut
2 cups of water
1 cup of broccoli, fresh or frozen
1 cup of spinach, fresh or frozen
a little chopped leeks
1 clove chopped garlic
1 teaspoon of grated ginger
a handful of basil
juice of 1/8 lemon
black and white pepper


In a blender chop peanuts until you get a fine powder. Add water and mix again. Return the mixture into a blender and add the rest of ingredients and mix until you get a smooth compound. Decorate with chopped vegetables of your choice (walnuts, pumpkin seeds, almonds, raw cabbage …). Serve warm or cold.
